This is the amount of food I made for my crowd. Cut it in half if you aren’t feeding giant boys!
1 lb frozen shrimp (tails removed)2 cans white beans4 tbsp Olive Oil2 tbsp Crushed Garlic1 tsp Crushed Red Pepper1 tsp Italian Seasoning2 lbs pasta
Cook pasta as directed. When noodles begin cooking, start sauce.
Add olive oil to skillet. Cook on high medium until hot. Add white beans. Sautee for two minutes.
Lower heat to low medium (don’t want the garlic to burn!) and add crushed red pepper, crushed garlic and Italian seasoning. Sautee for one minute.
Add cup of pasta water (scoop from pan where pasta is cooking) to sauce. Add shrimp. Cook until noodles are done. Add more pasta water if needed.
Drain noodles, toss with sauce and eat.
I added the beans because I didn’t have enough shrimp to fill everyone up–and they made a nice addition!
