Food Time! White Bean & Shrimp Scampi

This is the amount of food I made for my crowd. Cut it in half if you aren’t feeding giant boys!


1 lb frozen shrimp (tails removed)
2 cans white beans
4 tbsp Olive Oil
2 tbsp Crushed Garlic
1 tsp Crushed Red Pepper
1 tsp Italian Seasoning
2 lbs pasta
Cooking Directions

Cook pasta as directed. When noodles begin cooking, start sauce.

Add olive oil to skillet. Cook on high medium until hot. Add white beans. Sautee for two minutes.

Lower heat to low medium (don’t want the garlic to burn!) and add crushed red pepper, crushed garlic and Italian seasoning. Sautee for one minute.

Add cup of pasta water (scoop from pan where pasta is cooking) to sauce. Add shrimp. Cook until noodles are done. Add more pasta water if needed.

Drain noodles, toss with sauce and eat.

I added the beans because I didn’t have enough shrimp to fill everyone up–and they made a nice addition!

  1. I tried it one night, it was great! If I weren’t tired, I would have had it tonight. Was this your own recipe?

    • Tommy, since I am on the great scale down (except when it comes to electronics) I have lost my interest in shopping. If you wander through a store, you end up with impulse buys.

  2. I might have read something similar, but the one above is mine. I love white beans and add them to pasta sauce a lot.
