1 lb. pasta
1 15.5 oz can kidney beans (I used dark red)
1 cup mayonnaise
1/2 cup salsa
1 14.5 oz can spicy diced tomatoes (I used chili ready)
2 tbsp creole spice mix (I used Tony Chachere’s because my brother Tommy sent me some from Texas and it’s great!)
Cook pasta according to directions. When done, drain and rinse with cold water. Place in serving bowl and add kidney beans.
Mix mayonnaise, salsa, diced tomatoes and creole spice in a separate bowl. Add sauce mixture to pasta and beans and mix thoroughly. Chill.
