Food Time! Quick Cajun Pasta Salad

I needed something quick and easy for dinner (along with bbq’d burgers) and wanted to use ingredients I had in the house. This is what I came up with!

1 lb. pasta

1 15.5 oz can kidney beans (I used dark red)

1 cup mayonnaise

1/2 cup salsa

1 14.5 oz can spicy diced tomatoes (I used chili ready)

2 tbsp creole spice mix (I used Tony Chachere’s because my brother Tommy sent me some from Texas and it’s great!)

Cooking Directions

Cook pasta according to directions. When done, drain and rinse with cold water. Place in serving bowl and add kidney beans.

Mix mayonnaise, salsa, diced tomatoes and creole spice in a separate bowl. Add sauce mixture to pasta and beans and mix thoroughly. Chill.

Enjoy! I hope your family likes it as much as mine!
